Pumpkin Roll


3 ggs
1/2 tsp salt
1 cup white sugar
2/3 cup pumpkin
3/4 cup flour
1 tsp baking powder
1 tsp cinnamon
1 tsp ginger
1 cup chopped pecans
1 tsp oil


1 (8oz) cream cheese
4 TSB butter
1 cup powdered sugar
1/2 tsp vanilla

Preheat oven to 350 F
Beat eggs and sugar. Gradually mix pumpkin, flour, baking powder, salt, cinnamon and ginger. Spread batter evenly into pan. Sprinkle pecans over top. Bake for 20 minutes. Turn out on sprinkled towel and let cool.

Combine cream cheese, butter, powdered sugar and vanilla. Beat until smooth. Spread roll with filling and place on long sheet of waxed paper and wrap. Freeze or chill.
